SIMPLE RECIPES // Healthy & Delicious Breakfast Muffins

Getting a healthy breakfast in my tummy each morning is a daily struggle. I am not exactly a morning person (Disclaimer: I am very grumpy in the morning), and it's hard enough to get up and get dressed on time, let alone have time to eat something before I run out the door. I've been guilty of breakfast skipping from time to time, which I know is such a no-no, and I've made it a goal to make sure to eat at least something each morning. With an hour commute to work, squished between strangers on a crowded train car, I need all the sustenance I can get. 

As I kid I used to love my mom's chocolate chip banana bread, and lately I've had a craving for it. So, last weekend, I decided to give a healthy (and portable) version a try. 

These Banana, Oat, Chocolate Chip Muffins are no sugar added (apart from the chocolate chips), and contain no flour. I made them on a Sunday afternoon while watching my new Netflix obsession, The Great British Baking Show (Team Martha!!), and it was a fun, relaxing process without any stress. They were simple to make, with very few ingredients, and I've been eating them all week for breakfast - so quick and tasty. I think these are definitely going to be made again, and I'm sure I could even do some variations (adding fruit?). If you're a breakfast skipper like I was, try making a batch of these on a quiet Sunday afternoon, and you'll be set for the crazy week ahead! 

Banana, Oat, Chocolate Chip Muffins

Ingredients:

2 large bananas (ripe)
1 cup whole or 2% milk
1 egg
1 teaspoon vanilla extract
2 cups old-fashioned rolled oats
1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup chocolate chips

Instructions:

1. Preheat oven to 375 degrees.
2. Line muffin tin with baking cups (avoid paper, it may stick to the muffin).
3. In a bowl, mash bananas until mostly smooth.
4. Add the milk, egg, and vanilla and stir well.
5. Add the oats, salt, and baking powder and stir well.
6. Add the chocolate chips and stir.
7. Spoon the mixture into the baking cups (fill mostly to the top, these don't rise when baking).
8. Bake for 20 minutes. 
9. Let cool and then enjoy!!

EASY CRAFTING // "PATCHED OUT" SPRING ACCESSORIES

By the time March rolls around each year, I'm so tired of wearing boots, scarves and heavy jackets that I sometimes will spring to arrive by wearing bright colors and lighter layers. It usually doesn't work - I freeze. But at least I feel cute while doing it! The two DIY-projects I created this month were perfect to cheer me up out of my wintertime funk and get me excited for the warmer months to come. I hope they'll do the same for you!

In the springtime, there's nothing I love more than layering a denim jacket over all of my outfits. They're comfortable, easy to style in different ways, and they always looks classically cute. I've been seeing a lot of denim jackets with cute and colorful embroidery details this season and I was inspired to bring this trend into my own wardrobe in my own, Abby-ish way.

I discovered an amazing online retailer called Hipstapatch that sells fun and bright peel-and-stick patches that you can literally stick on anything! So of course, I placed a gigantic order, and was eager to get these cuties stuck onto everything I owned.

These patches would definitely look adorable on a denim jacket, a pair of white sneakers, or a fabric backpack, but I decided to try something a little different - I created a "patched-out" baseball cap and cell phone case.

​I took a denim baseball cap I found at Target and a clear cell phone case from cellularoutfitter.com, and planned out the adhesive patch distribution. The baseball cap became a sort of colorful, tropical fruit theme and the cell phone case was an ode to summer. The patches were so easy to use, and they really stick (HINT: Apply heat with a hair dryer when sticking on fabric, like the baseball cap. This helps it to stick better.). The patches stuck so well to both the plastic and the fabric surfaces - I was really pleased with the Hipstapatch product.


I think both the baseball cap and the cell phone case turned out super fun! Just looking at them makes it feel like summer. The whole craft (both the cell phone case and the hat) took 30 minutes tops. It was a mess-free, stress-free craft that could be fun and easy to do with friends - hello, Patch Party!! I'm definitely planning on ordering more adhesive patches from Hipstapatch in the future - the possibilities are endless. Hoodies, pencil pouches, notebooks... there are so many crafts and gifts to be made with these! I hope this DIY brightens your March day and excites you for the spring ahead.
